Wine Description for Pinot Grigio „Salvadi“ DOC 2020 by Scarbolo

Colour & Appearance
Luminous straw yellow with golden reflections that hint at a certain substance. Clear and brilliant in the glass – a Pinot Grigio that already stands out visually from industrial mass production.
Nose
Complex bouquet with ripe pears, yellow apples and a fine almond note. These are joined by hints of white flowers and a subtle herbal spice reminiscent of sage. The aromatics are precise and multi-layered – exactly what Pinot Grigio can be when taken seriously.
Palate
On the palate, the „Salvadi“ displays impressive structure and depth. Juicy fruit meets a vibrant, yet by no means aggressive acidity. The texture is what’s remarkable: creamy, almost oily, with a hint of saline minerality that is typical of Friuli Grave. The wine possesses grip and tension – far removed from inconsequential terrace wine.
Finish
Medium to long, with lingering fruit aromas and a fine bitter almond note that guarantees freshness and drinkability. The mineral component remains present and leaves a lasting impression.
Terroir & Origin
From Friuli Grave, the gravelly alluvial soils of eastern Friuli. These soils lend the wine its characteristic minerality and freshness. Since 2020, Mattia and Lara Scarbolo have undergone a radical transformation: organic cultivation with biodynamic influences, a drastic reduction of vineyard area by almost 50 per cent.
Grape Variety & Vinification
Pure Pinot Grigio, demonstrating the potential that lies in this often underestimated grape variety. The Scarbolo siblings have drawn inspiration from producers such as Luca Roagna and Arianna Occhipinti, focusing on exploring the underrated facets of Pinot Grigio.
Food Pairing Recommendations
Perfect with grilled fish, risotto with seafood, Vitello Tonnato or Fritto Misto. Also an excellent choice with pasta with butter and sage or asparagus with Parmesan.
Special Features
A statement wine from a new generation of Friuli winemakers who prioritise quality over quantity. The „Salvadi“ impressively demonstrates that Pinot Grigio can be far more than a faceless everyday wine.
