Color
The wine is first and foremost plain black with a violet rim, clear and shiny in the glass.
Nose
As dark as the wine is dressed, as deep and dark is also its scent. Smelling as well as seeing, one needs a while to get used to recognize contours in the darkness. This dense thicket of aromas conceals cooked plum jam, the scent of fresh Black Forest cherry pie, and the peppery spice of juniper berries and black truffle. And a single deep red rose blossoms behind a small fire-cleared patch of forest.
A wine that invites you to take a walk and discover the land from which Matthieu Barret's Syrah comes and which is inherent in it.
Palate
Pressure-full!
And yet delicate.
The 2015 Cornas Billes Noires of the Domaine du Coulet appears quite massive with a proudly swollen chest. After a brief heated confrontation between tannin, acidity and alcohol, these come into their own, as well as the realisation that they only achieve their greatness in unity. Like the three guys who, after knocking each other's heads in front of the pub, spend the best evening of their lives in it.
Hard shell, soft core. A changeable Brutus of a wine. Drink slightly chilled, at 16°C, from large glasses.

- Saddle of beef from the smoker with thyme jus, root vegetables and baked potatoes
- Leg of venison and liver with saffron sauce, braised parsley root and chanterelles with cranberries
