Colour & Appearance
Deep dark cherry red, almost impenetrable at the core, with pomegranate-hued reflections towards the rim – a visual promise of the concentration that characterises this appassimento rarity.
Nose
A captivating kaleidoscope of glazed black cherries and dark chocolate unfolds in the glass. Beneath this layer elderberry syrup, candied lavender and blackberry compote. Remarkable is the Mediterranean herb signature: bergamot, wild mint, rosemary and sage lend this opulent dessert wine a refreshing complexity that protects it from any heaviness.
Palate
The sweetness is present, but never intrusive – rather perfectly balanced by a spicy, noble tannin that recalls black tea and fine dark chocolate. The texture is silky yet structured, with a remarkable freshness that effortlessly carries the 120-140g residual sugar. A Recioto of impressive balance.
Finish
Long, spicy and characterised by a persistent chocolate-cherry aromatics. The herbal notes return and leave behind a refreshing, almost menthol-like aftertaste.
Terroir & Origin
The grapes come from the classic vineyard sites of Valpolicella Classico at 150-300m altitude, where stony limestone soil with high calcium content provides mineral precision. East and south-east facing slopes guarantee optimal ripeness.
Grape Variety & Vinification
Classic Valpolicella blend of 70% Corvina, 10% Corvinone and 20% Rondinella. The grapes were dried in wooden crates until the end of February – a patient appassimento process. Following fermentation in stainless steel, 20 days of skin contact, then 24 months ageing in barrique.
Food Pairing Recommendations
Excellent with chocolate desserts, Sachertorte, aged Parmigiano Reggiano, Gorgonzola dolce or aged Pecorino. An excellent companion to cigars. Also a fascinating pairing with game in dark chocolate sauce.
