Wine Description for Chassagne-Montrachet 1er Cru “Les Bondues” AOC 2023 1500ml Magnum from Darviot-Perrin

Character
Darviot-Perrin’s Chassagne-Montrachet Premier Cru “Les Bondues” from Pinot Noir represents a lesser-known but fascinating facet of this famous appellation. Whilst Chassagne is primarily celebrated for its white wines, this red Premier Cru demonstrates the mineral elegance and finesse that the terroir also imparts to Pinot Noir. In magnum format, the wine develops particularly harmoniously and promises longer evolution.
Terroir & Origin
The “Les Bondues” vineyard site is located in the southern part of the Côte de Beaune, where calcareous soils with high limestone content dominate. This geological composition fundamentally shapes the wine’s character and lends it that taut minerality which distinguishes Chassagne-Montrachet. The cooler microclimate of the southern Côte de Beaune ensures a longer ripening period and thus precise aromatics and vibrant acidity structure. The 2023 vintage benefited from a balanced growing season.
Grape Variety & Vinification
Darviot-Perrin maintains a traditional, artisanal approach in both vineyard and cellar. The Pinot Noir grapes are carefully selected and matured with a moderate proportion of new oak barrels so as not to mask the fruit. The estate places emphasis on precise extraction and respectful vinification that gives expression to the terroir. At 13.5% alcohol, the wine shows classic proportions without excessive concentration – a sign of balance and elegance in the Burgundian style.
Food Pairing Suggestions
This elegant Pinot Noir harmonises beautifully with roasted poultry, particularly duck or guinea fowl. Classic Burgundian dishes such as Coq au Vin or Boeuf Bourguignon are ideal companions. It also shows its versatility alongside aged Comté or Époisses. The mineral structure also makes it an interesting partner for mushroom dishes and game terrine.
