Background information on wine:
In the heart of special vineyards that are in the process of converting to organic viticulture, successfully completing this transformation in 2021, this particular crop of 100% Savagnin grapes was harvested by hand. Novel fermentation techniques were used in both oak and stainless steel under temperature controlled conditions. The ageing was done through careful maturation in reused oak barrels.

Fragrance notes:
On the nose, fresh hints of green and yellow apples, yellow pear and a touch of crisp peach unfold, overlaid with white floral notes, for example hawthorn. Subtle notes of fennel and graphite add an earthy dimension.
Flavour profile:
Surprisingly powerful on the palate, our En Guille Bouton presents an abundance of energy and intensity that is always balanced with a crisp, lively note. Citrus and pome fruit notes, some almond and a hint of nuts dominate the flavour profile. The texture reveals itself with a slightly creamy, aberrant consistency, but without being deeply heavy. The comforting warmth and maturity of the wine is palpable. The restrained presence of the reused wood rounds off the impression. A spicy note reminiscent of lemon peel lingers on the long finish.
