Wine Description for L’Odyssée de Flo IGP 2021 by Flo Busch

Colour & Appearance
Deep purple with violet reflections, slightly naturally hazy – an authentic wine without cosmetic intervention.
Nose
Here Languedoc reveals its coolest side. Sour cherry and blackcurrant dominate with taut freshness, flanked by elderberry, raspberry and subtle plum. Floral notes of lilac and hibiscus lend elegance. Then the Mediterranean wilderness unfolds: juniper, long pepper, fennel seed, along with garrigue featuring pine needles, rosemary, thyme and sage. This balsamic-spicy complexity is seductive, never heavy.
Palate
Remarkably silky texture for a southern French wine at 14% alcohol. The taut acidity forms the backbone, whilst fine, invigorating tannin provides structure without dominating. The aromatics mirror the nose precisely: pure-toned red fruit meets Mediterranean herbal spice. This balance between freshness and southern richness makes every sip compelling.
Finish
Long-lasting with spicy accents and cool freshness, the fruit-herb combination remains present and inviting.
Terroir & Origin
Mont Baudile in Languedoc: The Syrah is rooted in limestone scree, the Grenache Noir in weathered pebbles and quartz – this geological diversity explains the complexity.
Grape Variety & Vinification
60% Syrah, 40% Grenache Noir. Traditional vinification with 14 days of skin contact, remontage and pigeage, exclusively natural yeasts. 14 months ageing in used barriques, neither fined nor filtered. Minimal sulphur (32 mg/l total) – an honest, craftily perfect natural wine.
Food Pairing Suggestions
Roasted scorpionfish with baked potatoes and green olives, red mullet with dark lobster sauce, also surprisingly with beetroot carpaccio with feta, walnuts and honey – the herbal spice harmonises perfectly with Mediterranean flavours.
Special Features
Flo Busch’s „Odyssey“ proves that Languedoc can deliver freshness and elegance. A wine that combines southern richness with northern precision – charmingly wild, yet never rustic.
