Colour & Appearance
Deep, luminous purple with violet reflections – a slight, natural haze reveals its unfiltered origins and immediately sparks curiosity.
Nose
The nose surprises: despite southern French sunshine, this wine is remarkably cool and precise. Lush sour cherry and blackcurrant dominate, complemented by nuances of elderberry, raspberry and ripe plum. Beneath runs an elegant floral veil of lilac and hibiscus. Yet the true strength lies in its Mediterranean spice depth: juniper, long pepper, fennel seed and a balsamic herbal world of pine needles, rosemary, thyme and sage lend the wine a seductive wildness that far transcends its Languedoc profile.
Palate
On the palate, it fully delivers on the nose’s promise. The structure is silky, cool and taut – carried by vibrant acidity that ensures freshness and tension. The fine, precise tannin gives the wine grip and rhythm, never dominating. The marriage of pure-toned red fruit and Mediterranean herbal spice is extraordinarily harmonious and lingers long on the palate.
Finish

Terroir & Origin
The grapes hail from Mont Baudile in Languedoc – one of southern France’s most exciting terroirs. The Syrah is rooted in limestone scree, the Grenache in weathered pebbles and quartz. These soils impart the wine’s characteristic coolness and mineral precision.
Grape Variety & Vinification
A classic Southern Rhône blend: 60% Syrah, 40% Grenache Noir. Vinified with exclusively natural yeasts, approximately 14 days of skin contact with regular remontage and pigeage. No fining, no filtration. Aged for 14 months in used barriques. Total sulphur stands at a moderate 32 mg/l – an honest, craftsman-like natural wine with character.
Food Pairing Suggestions
Ideal with roasted scorpionfish with baked potatoes and green olives, with red mullet in dark lobster sauce and sweet potato purée or – for a vegetarian option – with a carpaccio of beetroot with feta, walnuts and honey.
