Colour & Appearance
Straw yellow with a seductive copper hue, indicating the Pinot Noir component. The mousse presents itself remarkably fine and persistent.
Nose
Delightfully delicate and precise: ripe apples, pears and quinces meld with creamy lemon curd and candied ginger. The autolytic notes are elegant and restrained – almond biscuits and fine yeast notes, without dominating. Mineral notes of crushed stone and delicate white flowers complete the picture.
Palate
The entry is smooth and creamy, almost caressing. Stewed apples meet fresh apples, red berries and white peach – an impressive fruit palette. The acidity develops with sophistication: initially silky-soft, then with increasing tension and freshness. The chalky minerality of the Côte des Bar shows itself distinctly, without being intrusive. The mousse remains consistently fine, the length is remarkable.
Finish
Persistently fresh with mineral aftertaste and fine yeast notes. The Brut Nature dosage (0 g/l) delivers crystal-clear precision and clarity in the finale.
Terroir & Origin
The vineyards lie at an impressive 320 metres altitude in the Côte des Bar, the southern part of Champagne. The Kimmeridge limestone – the same soil as in neighbouring Chablis – shapes the character of this Champagne decisively and gives it its distinctive mineral signature.
Grape Variety & Vinification
A perfectly balanced blend of 50% Chardonnay and 50% Pinot Noir from the 2018 vintage. The base wine was fermented in barrique, which contributes complexity and texture, the blend brought together in stainless steel. Bottled in June 2019, disgorged in March 2024 – nearly five years on the lees. The Brut Nature philosophy (zero dosage) underscores the purity and precision of the terroir.
Food Pairing Recommendations
Oysters, scallops, ceviche or sashimi are ideal partners. Also an excellent choice with pan-fried turbot, poultry in cream sauce or Comté cheese.
