Wine Description for Maury Tuilé Hors d’Age AOP by Terres de Fagayra

Colour & Appearance
A luminous, warm brick-red that reveals years of oxidative ageing – that characteristic tuilé colour which gives this style its name.
Nose
Here unfolds an intoxicating complexity: dried plums and peaches meet cherries and raspberries, accompanied by candied ginger and orange peel. These are joined by dark chocolate with mint, shortbread, delicate lavender notes and a whisper of cool slate. An aromatic profile in which one can lose oneself.
Palate
Despite 17.5% alcohol, this Hors d’âge displays remarkable elegance and lightness of touch. The powerful acidity deftly catches the sweetness and creates balance. Red fruits, dried fruits, ripe citrus notes and warm butter biscuit meld into a sensually creamy texture. Freshness and maturity coexist harmoniously.
Finish
Impressively long, with lingering fruit and spice notes that underscore the wine’s aromatic depth once more.
Terroir & Origin
The grapes hail from the brown slate slopes surrounding Maury in Roussillon – a terroir that imparts mineral freshness and structure to the wines, even at this level of sweetness and concentration.
Grape Variety & Vinification
A blend of Grenache and Carignan, crafted as a Vin Doux Naturel – fermentation is halted through alcohol fortification to preserve natural sweetness. The designation Hors d’âge signifies a minimum of five years‘ ageing in glass demijohns and/or wooden barrels, which leads to this oxidative complexity.
Food Pairing Suggestions
Classically with 12-hour lamb with plums and apricots, but also wonderfully with mirabelle plum tart or autumnal tiramisu with chestnuts. Equally suited to blue cheese or dark chocolate.
Special Characteristics
A wine that, despite its aromatic depth and power, retains a remarkable lightness – a testament to Terres de Fagayra’s mastery of this traditional Roussillon style.
