Kühling-Gillot's plots in Hipping are situated at the highest point of the site and resemble an amphitheatre framed by the red slate rock. They unite like a parabolic mirror and face each other directly on the north and south slopes. Situated at 80-170, above sea level with slopes up to 60%, they enjoy unrestricted sunlight. The barren and stony primary rock soils are around 280 million years old and store the heat of the day for optimal ripening of the grapes, while the cool night winds of the side valley preserve the acids. The wines of Hipping are fermented spontaneously by hand after strict selection and aged in wooden barrels.

Nose

The ripe, yellow fruit of the 2021 Hipping Riesling Großes Gewächs from Kühling-Gillot ranges from crumbly apple to ripe stone fruit and acts in a highly disciplined manner without exhausting itself in primary fruit. With increasing aeration, the immense extract of the Hipping blossoms; this year, HO has again set all aroma controls to maximum deflection. In addition, the distinctive spiciness of the Rotliegende in the Hipping combines yellow stone fruit with wet stones, chervil and red pepper.

Mouth

Despite its youthfully impetuous nature, the Hipping is silky on the nose with a fine flow, the phenolic of the carefully extracted tannins acts like golden guard rails on the palate. Accelerated by the triptych of acidity, extract and salt, immense density meets fine spice in an uncompromisingly dry appearance. Tastes good now from the carafe or in five years with great cuisine. Or just in between.
