Info about the wine
Hipping was first mentioned in documents around 1550 under the name "Hupbuhl". It is assumed that goats were once kept there, as Hippe means goat in dialect and Buhl means hill. Like a parabolic mirror, our two parcels unite at the highest point of the Hipping and, with their north-east and south-west slopes, are reminiscent of a small, natural amphitheatre. As one of the world's most unique terroirs, Hipping has a special microclimate. Situated at 80-170 metres with a slope of up to 60%, it enjoys unrestricted sunshine. Its 280 million year old barren primary rock soils store the warmth of the day, while the cool night winds of the side valley preserve the acids. With sustainability, respect and craftsmanship, H.O.'s aim is to help Hipping, the last piece of the puzzle in our portfolio of vineyards on the Roter Hang, to achieve new value and prestige. The grapes are strictly selected and harvested by hand, the must is fermented spontaneously and matured in 1200 litre barrels.

Radiant, deep golden yellow.
Nose
The aroma of the 2022 Nierstein Hipping conveys pure minerality, dried oyster shell, sea breeze sprinkled with limes, kumquats, green apple and star fruit. A cool and compact wine full of finesse and expression. Seductive at first sip.
Palate
Taut and invigoratingly acidic, it flows over the tongue, characterised by an intense salty note that is pleasantly provocative and invigorating. An incredibly profound wine that seduces the senses and beguiles with its finesse. A marvellous accompaniment to food!
Be sure to decant and enjoy not too cold from large glasses.
