Colour & Appearance

Deep, radiant golden yellow – a colour that already announces the concentration and maturity of this extraordinary Riesling.

Nose

Purist minerality dominates: dried oyster shell and sea breeze merge with precise citrus notes of lime and kumquat. These are joined by green apple and star fruit. A cool, compact bouquet full of finesse that unmistakably reveals its origin from the barren primordial rock of the Hipping.

Palate

Taut and electrifying: A refreshing acidity cuts precisely across the tongue, carried by an intense saline minerality that provokes and invigorates simultaneously. The wine displays impressive depth whilst maintaining finesse – a balancing act that only succeeds on this unique terroir.

Finish

Long, saline-mineral and vibrant with freshness. The acidity structure carries far without ever becoming aggressive – a finish that tempts you to take the next sip.

Terroir & Origin

The legendary Hipping in Nierstein ranks among the most extraordinary vineyards in the world. On 280-million-year-old Rotliegend primordial rock at 80–170 metres elevation, with slopes of up to 60%, a unique microclimate emerges: intense sunlight meets heat-storing soils, whilst cool night breezes from the side valley preserve acidity – a natural amphitheatre for Riesling.

Riesling in pure form. Strictly selected hand-harvested fruit, spontaneous fermentation and maturation in 1200-litre wooden casks – H.O. Kühling-Gillot works with respect and craftsmanship to express the identity of this great vineyard site.

Food Pairing Recommendations

A magnificent food companion: ravioli with walnuts and orange sauce, carabinieri with truffle and Vin Jaune or surprisingly also roast pork with glazed onions. The saline minerality pairs perfectly with oysters and seafood. Definitely decant and enjoy from large glasses at not-too-cool temperature.
