Wine description for Puligny-Montrachet 1er Cru Les Folatières “Au Chaniot” AOC 2024 by Thomas-Collardot
- Character
- A Puligny of subtle expression: salty, taut, with precise citrus fruit and that fine chalky texture which distinguishes great white Burgundies. No buttered toast, no clouds of vanilla – instead, transparency and a dry, linear drive that clearly speaks of its origin.
- Terroir & Origin
- Les Folatières ranks among the most renowned Premier Cru vineyard sites in Puligny-Montrachet on the Côte de Beaune. Domaine Thomas-Collardot is a family estate of just 2.5 hectares in the heart of the village – Jacqueline Collardot reclaimed her grandfathers’ vineyards in 2010, vinification has been carried out on-site since 2015, and her son Matthieu joined in 2018. The estate has been organically certified since 2021.
- Grape Variety & Vinification
- Pure Chardonnay, handled with a gentle touch in the cellar: soft pressing, 24 hours of sedimentation, ageing in used 228-litre barrels. Premier Cru wines mature for sixteen months on the fine lees; only lightly filtered, unfined, and largely without sulphur addition. The result: fine grain, cool precision, Burgundy without artifice.
- Food Pairings
- The taut, saline structure calls for the sea: sole in lemon butter, grilled scallops or oysters. Guinea fowl with morels, risotto with white asparagus or a fine Comté also provide astute counterpoints to the chalky freshness of this wine.
