Wine description for Chevry Cuvée Cuve, Blanc de Noirs V21 from Petit Clergeot
Colour & appearance
An elegant straw yellow colour with brilliant reflections, infused with a fine, precise perlage that rises gently in the glass - typical of a high-quality Blanc de Noirs from Champagne.
Nose
This single-varietal Pinot Noir is remarkably multi-layered with a fascinating range of aromas: crisp red apple and subtle red berry fruit meld with fresh lemon zest. The characteristic Kimmeridge limestone character is reflected in a fine mineral structure, while floral notes of jasmine and spicy hints of coriander add complexity. A subtle waxy component and delicate yeast notes harmoniously round off the bouquet.
Palate
On the palate, the champagne impresses with its fine balance between fruit and structure. The red-toned flavours continue, accompanied by an elegant precise acid structure and a restrained, elegant perlage. Pome fruit flavours of apple and quince dominate, underpinned by red berries and a subtle waxy texture. The finish is mineral, long and of remarkable precision - a testimony to the exceptional terroir of the Côte des Bar.
General information
Food pairing suggestions
The versatility of this champagne makes it ideal for fine dining. It harmonises excellently with Scallops in lemon butter, White fish sashimi or a Veal fillet tartare. Also to Mushroom risotto with parmesan or truffled cauliflower puree it unfolds its full potential.
Special features
As the third vintage of this cuvée, the V21 impressively demonstrates how Pinot Noir can develop its full potential in southern Champagne. The combination of eastern exposure, Kimmeridge limestone soil and the microclimate near the river gives this champagne a special tension between fruit and minerality. The zero dosage emphasises the purity of the terroir and the precision of the vinification - an impressive expression of Paul-Bastien Clergeot's emerging talent.
