Wine information
Les Herses is a total of 14 hectares of Oxford limestone and loamy soil in Sancerre. In Le Paradis, Planchon owns 0.9 ha with a southern exposure. The vines are on average 55 years old, planted at a density of 7,700 vines/hectare and yield around 45 hl/ha. After the hand harvest, the grapes are slowly pressed in a pneumatic press and pre-clarified at a temperature below 10 °C for about 36 hours. Then spontaneous fermentation takes place to 70 % in stainless steel tanks and to 30 % in 500-litre barrels. Maturation on the fine lees takes place in the same containers over a period that varies depending on the year. On average, it is ten to twelve months. Bottling then takes place in the lunar cycle.

Nose
The 2019 Sancerre Le Paradis presents itself straight and clear, almost shyly reduced, bright and crystal clear with notes of white flowers, limes and lemons, green apple and herbs. With air, ripe fruit notes push to the fore and the use of wood leaves a slight imprint. At the same time, the Sancerre extremely precise, even with heat.
Palate
On the palate, the power and intensity of this very mineral, puristic, powerful and almost steely cool wine is evident. Sancerre. The Le Paradis is pure, bright and electrifying on the palate. At the same time, it has something touchingly sensual and silky due to the yeast ageing and the use of wood. Besides the citrus fruit, there are salty notes, again some cassis and also elderberry. The wine also has a beguiling depth and tension as well as a long intense finish, deeply impressive for a maiden vintage!
