Wine information
Le Paradis is a total of 14 hectares of Oxford limestone and loamy soil in Sancerre. In this vineyard, Planchon owns 0.9 ha with a southern exposure. The vines are on average 55 years old, planted at a density of 7,700 vines/hectare and yield around 45 hl/ha. After the hand harvest, the grapes are slowly pressed in a pneumatic press and pre-clarified at a temperature below 10 °C for about 36 hours. Then the spontaneous fermentation takes place to 70 % in stainless steel tanks and to 30 % in 500 litre barrels. Maturation on the fine lees takes place in the same containers, over a period that varies depending on the year. On average, it is ten to twelve months. Bottling then takes place according to the lunar cycle.

Nose
The 2020 Sancerre Le Paradis is a fragrant and floral wine, whose intensity only becomes clear in the second moment. It smells of orange blossom, jasmine and broom, white and black currants and elderberry. The wine has a very slight hint of gooseberries, which quickly changes into notes of lemons, lemon balm and stone.
Palate
On the palate the Sancerre Lively, but at the same time silky in acidity and creamy in texture. The base is limestone, sparse, bleached white. But around it are the flowers again, cassis and elderberry, furthermore pure blue, which combine with the abrasion of grapefruit and a distinct spiciness, reminiscent of tobacco and earth. Finally, this is a long, intense and silky wine full of elegance.
