Wine Description for L’ambitieuse 2019+Réserve, Grand Cru Blanc de Blancs Extra Brut by Pertois-Lebrun

Colour & Appearance
Pale golden yellow with silvery reflections and a fine, delicate mousse that bears witness to four years of ageing on the lees.
Nose
A seductive aromatic bouquet of ripe apricot, orange and pear, interwoven with notes of warm brioche. These are joined by honey and salted butter, contrasted by a distinctive chalky minerality – a hallmark of the Grand Cru vineyard sites of the Côte des Blancs.
Palate
The Champagne displays a full, juicy character with perfectly integrated carbonation that seamlessly weaves into the fruit sweetness. Yellow fruit dominates, accompanied by a spicy character and a vibrant freshness that, despite the Extra Brut dosage of just 1.5 g/l, never comes across as austere.
Finish
Long, mineral and mouth-watering with a fine saline note that recalls the chalky soils of Champagne. The spicy nuances linger persistently.
Terroir & Origin
The Chardonnay grapes hail from five prestigious Grand Cru vineyard sites: Chouilly, Le Mesnil-sur-Oger, Oiry, Cramant and Oger – all villages renowned for their mineral, chalk-dominated soils and the resulting elegance of their Blanc de Blancs.
Grape Variety & Vinification
100% Chardonnay. The blend comprises 50% from the base vintage 2019 and 50% from reserve wines from 2013-2018. Only the first pressing was used. The base wine aged for 10 months, partly in stainless steel tank, partly in wooden barrel, unfiltered and unfined. Bottle fermentation began in July 2020 with a remarkable 48-month ageing on the lees.
Food Pairing Suggestions
A gastronomic Champagne that shines with scallops, turbot, lobster salad, goat’s cheese or truffle-based dishes. Also a pleasure enjoyed solo as an aperitif.
Special Features
A hand-crafted Champagne from a small grower who champions authenticity and terroir expression. The combination of extended lees ageing and minimal dosage underscores the purity and complexity of this Grand Cru.
