Wine Description for Saint-Romain blanc “Sous La Velle” AOC 2021 by Henri & Gilles Buisson

The Saint-Romain “Sous La Velle” 2021 from Henri & Gilles Buisson is a textbook example of Burgundy’s new, old style: moving away from lavish oak influence towards purist precision and terroir expression. In a cool vintage like 2021, the domaine, which has been working biodynamically since the 1960s, shines with vibrant energy. This Chardonnay comes from one of the village’s most historic vineyard sites and impressively demonstrates why Saint-Romain is regarded as an insider tip for lovers of vertical, mineral white wines. A wine that doesn’t impress through richness, but rather through its athletic structure and chalky depth.

Colour & Appearance
Clear, pale lemon yellow with delicate greenish reflections.
Nose
A cool, precise bouquet of white flowers, green apple and pronounced flint minerality. Behind this emerge fine nuances of lemon zest and a hint of fresh almond.
Palate
On the palate, the wine displays high energy and tautness. The knife-sharp acidity is perfectly integrated into the lean body. A pronounced saline texture gives the wine grip and drinking flow, accompanied by aromas of lime and wet stones.
Finish
Long-lasting, focused and remarkably purist with a chalky aftertaste that leaves you wanting the next sip.
Terroir & Origin
The “Sous La Velle” vineyard site is characterised by its exposed hillside position on limestone weathered soils, which emphasises the natural freshness and minerality of Saint-Romain.
Grape Variety & Vinification
100% Chardonnay. Officially Biodyvin-certified since 2018. Gentle pressing and ageing in used barriques to preserve the transparency of the fruit.
Food Pairing Recommendations
Excellent with trout meunière, fresh seafood or a ripe goat’s cheese (Crottin de Chavignol).
Special Features
An archetype of the appellation from one of the village’s most traditional estates, which has championed organic farming for generations.
