His „Sève“ – French for life sap – is a Blanc de Noir Brut Nature, a white sparkling wine made from red grapes without dosage. This radical decision to forgo any sugar addition liberates the pure essence of Pinot Noir and terroir. The 2018 vintage from the Côte des Bar, the southern part of Champagne near Burgundy, showcases the characteristic depth and substance of this often underestimated zone.
Terroir & Origin
Horiot manages his parcels in Les Riceys, a village renowned for its still rosé wine Rosé des Riceys. The chalky Kimmeridge soils impart a mineral tension and structural complexity to the wines. The Côte des Bar lies climatically between Champagne and Burgundy – more continental, warmer, with pronounced vintage variations. This geographical periphery allows producers like Horiot to craft characterful, terroir-driven Champagnes that stand distinctly apart from the assembly-dominated houses.
