Nose
The 2021 Aligoté Les Marechaux from Chavy-Chouet impresses with its clarity and precision. With full varietal typicity, it is dominated by aromas of salt marshes and fresh garden herbs. In detail, it has savoury, sage, lemon balm and thyme. Dark aromas are reminiscent of almonds and colourful pepper. A hint of yellow apple and quince swirl in the background. Lemon tart and a hint of yeast pastry are subtly perceptible.
Palate
On the palate, it reveals its pure purity and delicacy. Characterised by elegance, coolness and finesse, it opens up clearly in its aromatic language. Its finely chiselled but very present acidity structure clearly characterises it. This is of course ideal for a Kir, but usually too good for that. This Aligoté can have a much more positive influence on dishes or make people happy as an active part. It revitalises and motivates with aromatic depth. With a little temperature, it develops density and also a simple form of melting on the palate.
