Colour & appearance
Medium straw yellow in colour with a lively, fine perlage that bears witness to the long bottle ageing.
Nose
An uncompromisingly independent champagne that clearly stands out from the Blancs de Blancs of the Côte des Blancs. The nose reveals a fascinating combination of fine oxidation and mineral freshness: Noisette, Lemon meringue, the salty note of ground oyster shells, Dried herbs and a pronounced Stoniness. Precise and clear, without any compromises.
Palate
Vinous and full-bodied, with captivating clarity and precision. The Kimmeridge lime translates almost one-to-one into vital acidity and Chalkiness. A remarkable mouthfeel that Silkiness with mineral texture and a fine phenolic note. Agrumen, a touch Sherry flavour, yellow fruits, Iodine and Rock - all carried by elegant pressure and fine perlage.
Departure
Long, mineral and precise with persistent pressure. The chalky freshness and Salty minerality remain in the mouth for a long time.
Terroir & origin
The vineyards of Louise Brison are located at an altitude of around 320 metres in the Côte des Bar, the southernmost part of Champagne. The soils from Kimmeridge limestone and marl with clay layer are similar to those of the neighbouring Chablis and give this champagne its unmistakable, mineral-precise character.
Grape variety & vinification
100% Chardonnay from the 2016 vintage. The base wines were produced in Barrique fermented, The assemblage was blended in stainless steel and bottled in June 2017. Disgorgement in January 2024 after almost seven years of yeast storage. Brut Nature - without any dosage.
Food pairing suggestions
The salty minerality and oxidative complexity harmonise perfectly with Scallops and prawns in tempura, Tuna tartare or Spaghetti with courgette flowers, parmesan and basil oil. Also to raw oysters or matured Comté an excellent choice.
Special features
A radically independent champagne that bears the signature of Delphine Brulez and continues the tradition of her grandmother Louise Brison. The long ageing on the lees and the absence of dosage make it a uncompromising terroir champagne for connoisseurs.
