This rosé champagne from Bonnet-Ponson is a fascinating example of the art of the perpetual reserve method - a wine that combines complexity with freshness and consistently dispenses with dosage.

Colour & appearance

Bright strawberry red with a lively, fine-pearled mousse that shows impressive persistence. The colour reflects the 7% red wine addition without appearing too dark or heavy.

Nose

The bouquet is powerful and multi-layered: Wild strawberries and red peaches meet tart Barberries and Grapefruit. This is accompanied by spicy notes of Tobacco and Herbs, accompanied by a touch of warmth Puff pastry. The wine owes this complexity to the 30 per cent solera reserve and the partial barrique maturation.

Palate

The palate reveals the true class of this Non Dosé: the perlage is lively and at the same time rich in finesse, while a powerful acidity and subtle tannins provide structure. The flavour of red and yellow fruits merges with tart grapefruit peel and a fine mineral vein. The overall impression is dry, vital and decidedly animating to drink - with a minimal total sulphur content of 20 mg/l, everything appears precise and clearly contoured.

General information

The blend consists of 50% Pinot Noir, 25% Chardonnay and 25% Meunier, with the 2018 vintage forming the basis. 75% of the wine matured in stainless steel, 25% in barrique. After bottling in May 2019, the wine was disgorged on 10 November 2023 - an uncompromisingly dry champagne with 0 g/l dosage.

Food pairing suggestions

This is definitely not an aperitif champagne, but a born food companion. Excellent with Oven chicken with harissa and pointed peppers, Maklubé or Spicy sardines in olive oil with bread. The structure and spiciness of the wine harmonise perfectly with spicy, aromatic dishes.

Special features

The perpetual reserve method (solera) gives this champagne additional depth, while the 10% maceration and the addition of red wine provide colour and structure. An exceptional rosé champagne for connoisseurs.
