Colour & Appearance
Delicate, elegant golden yellow with silvery reflections – a wine that already visually hints at the altitude and volcanic minerality of its origin.
Nose
Immediately captivating: pear, honeydew melon and lemon zest meld with linden blossom, verbena, fresh hay and a whisper of anise. The aromatics breathe Mediterranean lightness whilst simultaneously possessing a deep mineral foundation – precise, vibrant, invigorating.
Palate
Refreshing and powerful at once, with a liveliness that particularly distinguishes the 2024 vintage. Despite its slender 11.0% ABV, the Aurora displays remarkable presence: bright fruit, framed by invigorating acidity, delicate grapefruit notes and a refined tannin that lends structure and tension.
Finish
Long, mineral-driven, with fine herbal spice and a saline echo of the volcanic soil. The delicate bitter notes linger and leave a refreshing, almost meditative impression.
Terroir & Origin
The vineyard site lies in Milo on the eastern slope of Mount Etna at 750 metres altitude. Volcanic soil with a high proportion of Ripiddu – lapilli and pumice – defines the character of this extraordinary white wine. Named after Aurora, a rare native butterfly, the wine symbolises the fragility and beauty of this unique ecosystem.
Grape Variety & Vinification
90% Carricante and 10% Minnella Bianca, hand-harvested in early October. Whole bunches are pressed directly, the must naturally clarified over 30 hours. Fermentation with indigenous yeasts in stainless steel tank, minimal filtration, discreet sulphur addition at bottling in spring. Only 5,500 litres yield per hectare – concentration through reduction.
Food Pairing Suggestions
Fresh seafood, grilled squid, spaghetti alle vongole, pan-fried monkfish, goat’s cheese or Sicilian antipasti with olives and capers. Also excellent with steamed asparagus or fennel and orange salad.
