Wine Description for Aurora Bianco Caselle DOC 2024 by I Vigneri di Salvo Foti

Colour & Appearance
Delicate, elegant pale gold with silvery reflections – a wine that promises lightness and freshness from the moment you pour it.
Nose
Captivingly clear and precise: pear, honeydew melon and lemon zest meet linden blossom, verbena, hay and a hint of anise. The aromatics radiate Mediterranean joie de vivre, underpinned by a deep mineral foundation that cannot deny its volcanic origins. Remarkably invigorating.
Palate
Here the Aurora 2024 reveals itself even more vibrant than in previous vintages – despite a moderate 11.0% ABV. Refreshing, mineral and forceful all at once. The bright fruit is carried by an invigorating acidity, fine grapefruit notes and a delicate tannin in the finish give the wine structure and tension.
Finish
Long, mineral, with fine bitterness – the wine lingers with elegance and captivates you.
Terroir & Origin
The vines are rooted at 750 metres altitude in the municipality of Milo on the eastern slopes of Mount Etna, in volcanic soil with a high proportion of Ripiddu (lapilli and pumice). This extraordinary terroir gives the wine its characteristic minerality and freshness. The name Aurora – after an endangered butterfly species of the region – underscores its connection to nature.
Grape Variety & Vinification
90% Carricante and 10% Minnella Bianca, both indigenous Sicilian varieties. Harvested in early October, direct pressing of whole bunches, natural must clarification over 30 hours, fermentation with indigenous yeasts in stainless steel tank. Minimal filtration, bottling in late April/early May. Yield: modest 5,500 litres per hectare – quality over quantity.
Food Pairing Suggestions
Perfect with grilled fish, seafood, calamari, pasta with lemon-ricotta sauce, goat’s cheese or simply as an aperitif. The wine calls for Mediterranean cuisine – light, fresh, sun-kissed.
Special Features
A masterpiece by Salvo Foti, the pioneer of modern Etna winemaking. The Aurora embodies Sicilian wine culture in its purest form: authentic, vibrant, unmistakable. A white wine that speaks terroir and captures Mediterranean joie de vivre in a bottle.
