Wine description for Attis Mar, aged 9m under water in the Galician Sea 2023 from Attis Bodegas y Vinedos
Colour & appearance
Brilliant light gold with crystalline clarity. The bottle itself is a work of art - covered with maritime deposits that bear witness to its unusual maturation under the Atlantic.
Nose
A fascinating aromatic profile that captures the essence of Galicia. Precisely defined notes of green apple and Williams pear, underpinned by subtle hints of peach. The Salty minerality is not a marketing slogan, but a tangible reality - a hint of shell limestone and wet stone that elegantly frames the fruit flavours.
Palate
On the palate, there is a remarkable tension between silky texture and vibrant acidity. The fruit is focussed and precise - not exuberant, but taut and disciplined. The wine develops with every moment in the glass, revealing layers of citrus fruit and white stone fruit, while the Salty-iodine component always remains present. The finish is impressively long, with lingering minerality and a subtle bitterness reminiscent of citrus peel.
General information
An Albariño that pushes the boundaries of convention. The grapes come from 50-year-old vines grown in traditional pergola training. After maturing for six months in wooden barrels, the wine is aged for an unconventional nine months at a depth of 12 metres in the Atlantic Ocean - at a constant temperature, constant pressure and in complete darkness. With 13% alcohol and minimal residual sweetness, this is a serious, dry white wine of remarkable precision.
Food pairing suggestions
The maritime character predestines this wine for seafood. Excellent with grilled squid, Oysters and Percebes (barnacles). Also to Ceviche or a classic Pulpo a la Gallega a brilliant accompaniment. The acidity structure also harmonises perfectly with fattier fish such as Sea bass in butter sauce.
Special features
A wine that redefines the terroir discussion. Submarine maturation is more than a gimmick - it adds a unique dimension to the wine. The constant conditions and the gentle movements of the sea seem to accelerate and refine the development of the wine. With this project, Attis Bodegas y Vinedos proves that innovation and tradition can coexist harmoniously in Rias Baixas. A exceptional Albariñowhich reflects the Atlantic identity of Galicia in every nuance.
