Here Pinot Noir shines in all its expressions. The silky texture, the earthy notes and the restrained tannins complement the duck breast without dominating it. Whether Spätburgunder from the Palatinate, Sancerre rouge from the Loire or a great Burgundy – they all play perfectly with it.

Our tip: Serve duck breast at 16-17°C, open the wine half an hour beforehand. The breast should be rare – medium rare is perfect.
