- Luminous straw yellow with subtle orange reflections and a silken shimmer – a first hint of skin contact time.
- Nose
- This wine demands patience and air in the glass. Initially reserved, it unfolds slowly into a fascinating aromatic world: waxy yellow apples, freshly cut, orange blossom and chopped sweet almonds. Mild kitchen herbs such as chervil and lemon balm join the party. The nose already reveals artisanal finesse – yeast ageing and skin contact shape the character.
- Palate
- Here the Tonsur shows its true face: A super juicy attack with creamy texture meets a powdery grip that caresses the palate. With this wine, it’s not about upfront fruitiness, but about texture, structure and extract. Everything feels taut and precisely cut. The fruit aromas reveal themselves primarily on the retro-nasal, whilst the fine phenolics contribute a aromatic, warm bass. At just 11.5% alcohol, a remarkable achievement in substance and depth.
- Finish
- High-frequency and invigorating – the wine demands to be poured again. The phenolics remain present without being intrusive, leaving a lingering, spicy aftertaste.
- Terroir & Origin
- From the vineyard site Oberplatten am Ritten, where alpine meets Mediterranean climate. The volcanic soils lend the wine its mineral tension and structure.
- Grape Variety & Vinification
- A classic field blend of approximately two-thirds Müller-Thurgau, complemented by Pinot Blanc, Chardonnay and Silvaner. Crisp harvest, 50% co-fermented with stems and six days on the skins. Ageing takes place in concrete on the lees until April – a vinification that prioritises substance over spectacle.
- Food Pairing Suggestions
- The structure and powdery grip call for substance: calf’s sweetbread with morels, pan-fried turbot, asparagus with brown butter or mature hard cheeses such as Bergkäse. Also an excellent choice with risotto with herbs.
