Bouquet
The aroma of the "350m" Saint Joseph Rouge is lush and complex, similar to a deep, swinging velvet curtain. To release its full aromatic palette, it undoubtedly needs good aeration. It then unfolds powerful aromas of beetroot, blackcurrant, plum jam, dried plums, cranberry compote and candied olives, enveloped by notes of tar, liquorice, fine dark chocolate and fresh coffee. A powerful layer of mineral tones gives it structure and incredible depth.
Taste
The "350m" Saint Joseph Rouge is as dense and complex on the palate as its nose suggests. The explosive fruitiness from the nose meets the palate and presents itself charmingly with a hint of sweetness. The tannins and acidity are perfectly mature and give the wine youthful freshness. Mineral salt notes nestle pleasantly on the palate, but promise a wine that will be even more impressive in a few years. Those who cannot wait should give themselves enough time to decant it.
Food suggestions
For the perfect pairing, try oven-roasted beetroot marinated with olive oil and thyme. Duck liver pate with caramelised figs also offers an exquisite choice. A grilled rib-eye steak accompanied by a mushroom risotto and truffle sauce could be an equally exceptional complement.
