Sancerre blanc “Les Romains” AOC 2021

Wine Overview
With the vineyard site Les Romains, Domaine Vacheron presents simultaneously its most distinctive estate. Located at the eastern edge of the renowned Sancerre, this terroir harbours a blend of Sauvignon Blanc and Pinot Noir. The unique character of this wine emerges through the use of a mixture of large wooden casks and barriques during the 10-month fermentation and maturation period.

Colour Profile
A muted straw-yellow colour scheme interspersed with a fleeting hint of green characterises the wine.

Aroma Profile
Unmistakably, this glass presents the distinction of a single-vineyard Sancerre, interwoven with the characteristics of the vines and the flint soil, whose influence is equally noticeable in Pouilly-Fumé. The bouquet scores with aromas of green stone fruits, ripened gooseberries and blackcurrant, underpinned by nuances of green elderflower, box and lime, mingled with green apples. This aroma is rounded off with accents of crushed stone, a hint of ash, lichen and the zest of lime.

Taste Experience
As expected, the wine continues its excellent profile of a flint Sancerre as it unfolds on the palate. It is a powerful, yet expressionistic experience, equipped with energising acidity and minerality, but also with a ripe and silky acidity, accompanied by an abundance of juicy green fruits. The composition would not be complete without notes of fennel, garden herbs and again crushed stone. Both the persistence of this wine and its depth represent outstanding attributes. However, it requires some experience to appreciate these aspects, as the green expression of the cool vintage still dominates.

Tempura of green asparagus with aioli sauce, Creole jambalaya or grilled scallops, garnished with parsley and a splash of lime juice.
