Overview of the wine
With the Les Romains site, Domaine Vacheron also presents its most distinctive vineyard. Located on the eastern edge of the renowned Sancerre, this terroir is home to a combination of Sauvignon Blanc and Pinot Noir. The unique character of this wine comes from the use of a mixture of Stockinger barrels and barriques during the 10-month fermentation and ageing period.

Aroma profile
The distinction of a single-vineyard Sancerre is unmistakably presented in this glass, interwoven with the characteristics of the vines and the silex soil, whose influence is also noticeable in the Pouilly-Fumé. The bouquet scores with scents of green stone fruits, ripened gooseberries and cassis, underlaid with nuances of green elderberry, boxwood and limequats, mixed with green apples. This aroma is rounded off with accents of crushed stone, a hint of ash, lichen and rubbing lime.
Taste experience
As expected, the wine continues its excellent profile of a Silex-Sancerre as it unfolds on the tongue. It is a powerful, while at the same time expressionistic experience, endowed with energising acidity and minerality, but also with a ripe and silky acidity note, accompanied by an abundance of juicy green fruits. The compartments would not be complete without notes of fennel greens, garden herbs and again crushed stone. Both the persistence of this wine and the depth represent excellent attributes. However, it takes some experience to appreciate these aspects, as the green expression of the cool vintage still dominates.

Tempura of green asparagus with aioli sauce, creole jambalaya or grilled scallops garnished with parsley and a squeeze of lime juice.
