About the wine
This adventurous red wine challenges conventional wine practices. With its unusual blend of Domina and Riesling, the Rouge presents itself in a rather atypical guise, with acidity and fruit as the main protagonists. It thus contrasts with traditional red wines and, like its white brother, prefers a chilled comfort zone. As the second wine in the natural wine series at Gut Wilhelmsberg, it remains unfiltered and receives only a minimal addition of sulphur.
About the vinification
The Domina grapes for the Rouge were harvested relatively late during the 2021 harvest. Completely intact, they were put directly into the fermenter to aim for intracellular fermentation. The mash was only flooded for ten days, never pressed. After fermentation, the grapes were gently pressed and matured in German oak barrels. Just before bottling, a touch of Riesling was added and the wine was bottled unfiltered after a minimal addition of 20mg/l of sulphur.
The blush presents itself in a graceful violet red, interspersed with purple reflections.
The first impression is carried by a rich abundance of fruit, with notes of cherries, berries and fresh herbs. An uncomplicated and charming Symphony that awakens the anticipation of the first sip.
On the palate, the wine delights with the same fullness of fruit as on the nose, complemented by a refreshing structure and charming richness. This red wine, best chilled, is a real pleasure with light meals or snacks such as vesper dishes, where one likes to drink one or two more glasses!
