Wine Description for Riesling Dry 2022 from Roterfaden

Colour & Appearance
Luminous golden yellow with bright reflections – a Riesling that visually hints at its one year of yeast ageing.
Nose
Here reveals itself a radically terroir-driven Riesling that subordinates varietal typicity in favour of its character of origin. Limestone and wet stones dominate with mineral precision. The aromatics are characterised by remarkable purity and linearity. Dried herbs – both local and Mediterranean – unfold in layers: mint and eucalyptus provide ethereal freshness, lemongrass and coriander bring an exotic spice note. Subtle nutty accents of almond and macadamia lend depth. Fruit? Only hints of peach and quince in the background – and that is exactly as it should be.
Palate
With taut spice and distinctive structure, this Riesling presents itself uncompromisingly. The phenolic texture lends edges and angles that one rarely finds today – and misses. The shell limestone becomes virtually tangible, a sparse, stony minerality dominates the palate for minutes on end. The piquant acidity is perfectly integrated, stretches the wine to impressive lengths and invites further sipping. The herbal spice combines freshness and intensity into a harmonious whole.

Long, mineral and characterised by persistent herbal spice. The acidity carries far, the limestone remains present.

30-year-old vines on shell limestone soils in Baden-Württemberg provide the material for this uncompromisingly terroir-oriented Riesling. The limestone is not merely a geological foundation, but a flavour essence.
Grape Variety & Vinification
Whole bunches are gently crushed by foot, one day of skin contact, basket pressing, fermentation in used 300-litre barrels. One year of ageing on full lees without bâtonnage, unfiltered, minimally sulphited – purism pure and simple.
Food Pairing Recommendations
This wine demands dishes with substance: pan-fried zander with herb crust, calf sweetbreads with morels, asparagus tossed in butter, goat’s cheese of medium maturity or Asian dishes with coriander and lemongrass.
Special Features
