Colour & appearance

Pale straw yellow with greenish reflections. The perlage is fine and persistent, a sign of the traditional bottle fermentation and the careful work in the cellar. The mousse develops particularly elegantly in the magnum bottle.

Nose

Clear, precise flavour with the typical coolness of the high-altitude Wachenheim vineyard. Green apple and citrus fruits dominate, accompanied by fine brioche notes and a hint of herbs. The mineral component - a legacy of the volcanic soils - gives the sparkling wine a fascinating depth. Subtle yeast notes emphasise the handcrafted quality.

Palate

Brut Nature here means: uncompromising purity. Without dosage, this Riesling sparkling wine shows its true colours - taut, precise, with crisp acidity that is perfectly integrated. The cool fruit of Lemon and green apple is carried by a salty minerality reminiscent of the geological diversity of the Odins Valley. The finish is long, refreshing and remarkably elegant. At 12.5% alcohol, the sparkling wine remains light-footed and easy to drink.

General information

The Odinstal, the highest single vineyard in the Mittelhaardt at up to 350 metres, provides the ideal conditions for this exceptional sparkling wine. The biodynamic cultivation since 2006 and the geological complexity - basalt, red sandstone, shell limestone and Keuper in a very small area - create a sparkling wine of impressive authenticity. The Hensel family has been proving since 1998 that quality and terroir expression do not tolerate compromise.

A sparkling wine for sophisticated moments: excellent with raw fish, Oysters, Sashimi or Ceviche. Also to fried monkfish, Scallops or Goat cheese a brilliant choice. The Brut Nature style makes it the ideal accompaniment for the whole meal.
