Wine Description for Spätburgunder Dry 2022 by Peter Jakob Kühn

Colour & Appearance
Medium-transparent ruby red in the glass – classically Burgundian in character with vibrant clarity.
Nose
Captivingly multi-layered: dark cherries and blackberries meet damp forest floor with autumnal leaves. These are joined by spicy notes of cinnamon and clove, a hint of cedar, subtle oak and mineral graphite notes. An aromatic profile that oscillates between fruit and earthy complexity.
Palate
Here the true class reveals itself: juicy and sensual, yet smooth with fine texture. The dark cherry fruit is threaded through with an invigorating acidity that lends the wine freshness and tension. Fascinating are the Asian spice notes – five spices and a hint of aged soy sauce – which give the Spätburgunder an unusual yet harmonious depth. The tannin structure is refined and well-integrated, the oak remaining subtle in the background.
Finish
Long, meaty and with a slightly saline character that recalls the maritime origin of the sediments. The juiciness carries far, the fruit remains present – a finale that invites the next sip.
Terroir & Origin
The vines are rooted in the Oestricher Klosterberg vineyard site, in the old Deez parcel at 160 metres elevation. The gravelly soils with fluvial and maritime sediments lend the wine its characteristic minerality and saline note – a terroir that produces lighter, elegant Pinots.
Grape Variety & Vinification
Small-berried Burgundian clone material, which Peter Jakob Kühn vinifies with a deft touch. With 1.6 g/l residual sugar, 5.3 g/l acidity and 13% alcohol, the wine displays perfect balance. The maturation is restrained in wood, allowing the fruit and terroir to take centre stage.
Food Pairing Recommendations
The spicy notes and saline minerality make this Spätburgunder ideal for duck breast with cherry sauce, braised beef or game dishes. Also a compelling pairing with Asian-inspired dishes featuring soy sauce, tuna tataki or pan-fried shiitake.
Special Characteristics
A Rheingau Pinot that combines Burgundian elegance with distinctive character. The saline minerality and unusual spice notes make it a distinctive interpretation of the grape variety – typical of the biodynamic signature of Peter Jakob Kühn.
