Colour & Appearance
Luminous straw yellow with fine greenish reflections – clear, brilliant and characterised by youthful freshness.
Nose
An oscillating play of aromas that captivates immediately: ripe peach, yellow plum and mirabelle meet juicy golden-yellow pear and a hint of khaki fruit. Subtle spice from turmeric and saffron sets precise accents without ever appearing opulent. With air contact, piquant facets unfold: cubeb pepper, allspice, cardamom. Dried herbs – marjoram, sage, bay leaves – and intense lemon thyme bring ethereal coolness. Freshly chopped almonds round off the powerful, coolly contoured overall picture.
Palate
Energetic and juice-driven – this Doosberg immediately stimulates salivation. The fruit remains deliberately restrained; instead, spicy and herb-driven nuances dominate, shaping the structure. A cool, finely chiselled finesse runs through the wine, accompanied by delicate, unobtrusive minerality. Terroir & Origin
The Doosberg vineyard site at the edge of Oestrich at 120 metres elevation with a 15% south-facing slope is characterised by lime-rich loess loam and terrace sediments from the primordial sea. Taunus quartz runs through the subsoil. The wind-exposed location ensures coolness and healthy, slow grape ripening – ideal conditions for this precise Grosses Gewächs.
Grape Variety & Vinification
100% Riesling, gently pressed as whole bunches, spontaneously fermented with natural yeasts. Maturation for sixteen months on full lees in traditional large oak casks (1200l) and double casks (2400l). With 3.6 g/l residual sugar and 7.4 g/l acidity, a prime example of Kühn’s philosophy: precision, tension, drinking flow.
Food Pairing Recommendations
Pan-fried char with herb butter, pike-perch on creamed sauerkraut, calf’s sweetbread with morels, asparagus with hollandaise sauce, goat’s cheese of medium maturity or Thai curry with coconut milk and lemongrass.
