Character
Tom Lubbe of Matassa is among the pioneers of the natural wine movement in Roussillon. His Olla Rouge embodies uncomplicated drinking pleasure, deliberately opting for low alcohol (10% vol.) and maximum freshness. The magnum bottle underscores the convivial character of this wine – an unpretentious companion that invites shared enjoyment. The unusual cuvée of Grenache, Macabeu and Grenache Gris yields a light, juicy red wine with a pale ruby hue and vibrant fruit.
Terroir & Origin
Roussillon, wedged between the Pyrenees and the Mediterranean, is shaped by intense sunshine and the Tramontane wind, which ensures dry, healthy grapes. Matassa works in the elevated vineyards of Calce with old vines on slate and granite soils, which retain remarkable freshness despite the Mediterranean climate. Early harvesting and gentle vinification aim to capture this natural tension in the bottle – a deliberate counterpoint to the powerful, high-alcohol wines for which the region was long known.
Grape Variety & Vinification
The combination of red and white Grenache with the white Macabeu grape is characteristic of Lubbe’s approach: he seeks texture and drinkability rather than concentration. The grapes are harvested early, partly vinified as whole-bunch fermentation, which gives the wine its crisp fruit and floral notes. Without added sulphur or oenological intervention, wines emerge that showcase the Mediterranean terroir in its most light-footed form – honest, direct and refreshingly vibrant.

The low alcohol content and vibrant acidity make Olla Rouge the ideal companion for charcuterie, grilled vegetables and Catalan tapas.
