Colour & appearance

Light, sparkling golden yellow with delicate silver reflections. The perlage is very fine and widely dispersed - a visual promise of elegance and precision craftsmanship.

Nose

This Blanc de Noirs from Pinot Noir reveals a remarkable aromatic complexity. Finest Yeast notes form the foundation, surrounded by Pear, Apple and Peach. This is accompanied by cool, chalky nuances, reminiscent of great champagnes. Grapefruit and Herbal flavours provide additional depth - precise, mineral, beguiling.

Palate

The palate reveals the true class of this sparkling wine: compact, invigorating, with a juicy fruit flavour and perfectly integrated carbon dioxide. The Salty reverberation gives the wine a maritime freshness that immediately stimulates salivation. The texture is creamy and fine, the structure precise - a sparkling wine with serious aspirations.

Departure

Long, dancing and multi-layered. Alongside the persistent Herbal notes compete in the final floral notes which give the sparkling wine an additional aromatic dimension. The lack of dosage emphasises the purity and clarity of the expression.

Grape variety & vinification

Reiner Pinot Noir, vinified according to the classic Champagne method. Hand-picked, gentle whole bunch pressing with exclusive use of the first pressing fraction (cuvée). The base wine matures in used wooden barrels, followed by at least three years of yeast storage in the bottle. Disgorged without dosage (Extra Brut) - an uncompromising approach that emphasises terroir and craftsmanship.

Food pairing suggestions

A grandiose Apéritif, but which can do much more. Excellent for Oysters, Scallops, Sashimi or Ceviche. Also to fried turbot, Sweetbreads or Truffle risotto a congenial accompaniment. The salty minerality goes perfectly with matured hard cheeses.

Special features

Das Weingut Rebholz zählt zu den Pionieren deutscher Winzersekte. Die Bezeichnung “π No.” ist geschützt und wird verwendet, wenn neben Pinot-Rebsorten auch Chardonnay in der Cuvée enthalten sein könnte – hier handelt es sich jedoch um einen sortenreinen Blanc de Noirs. Ein Sekt, der den Vergleich mit großen Champagnern nicht scheuen muss.
