Colour & appearance

Slightly yeasty-cloudy straw yellow with Intensive foaming and subtle green reflections - authentically unfiltered, as befits an honest Pet Nat.

Nose

The muscatel is immediately noticeable: Aromatic and fragrant with Citrus fruits, Ripe grapes and Orange blossom. These are joined by notes from Pear and apple tart, something Honeysuckle and Nutmeg, accompanied by fresh Apple peel and subtle yeast - complex and inviting.

Palate

Completely dry despite the aromatic nose. Racy acidity meets Yeast character, crumbly apple and Apple peel. In addition Orange and lemon cream, a touch Grapefruit and Lychee. The wine has impressive Tension and pressure, has a dressing and lively, yet pleasingly serious effect - without denying its shirt-sleeved pet-nat charm.

Departure

Fresh and lingering with a fine yeasty note and citrus-fresh acidity that encourages the next sip.

Terroir & origin

From the Kamptal, one of Austria's most renowned wine regions, where Fred Loimer is one of the pioneers of natural viticulture. The cool climate and mineral soils characterise the freshness and precision of this sparkling wine.

Grape variety & vinification

Cuvée from 75% Donauriesling (Grüner Veltliner) and 25% Muscatel. Hand-picked in 20kg crates, whole bunch pressing, partial mash fermentation. Spontaneous fermentation in steel tanks, ageing in classic Méthode Ancestrale with six months on the lees. Bottled in October 2023, disgorged in June 2024.

Food pairing suggestions

Perfect as an aperitif or with Oysters, Sushi, Ceviche, baked goat cheese or Asparagus dishes. Also to Light summer rolls or fried calamari an excellent choice.
