Wine Description for Orphée VdF 2019 by Les Poëte

Colour & Appearance
Pale golden yellow with silvery reflections – a wine that displays its three years of maturation in the glass.
Nose
Impressively mineral and complex. Oyster shell and yeasty notes dominate initially, before citrus fruits, apple skin, white currants and a surprising fennel note unfold. This Sauvignon Blanc demands air – the decanter is no luxury here, but essential to unlock its elegant depth.
Palate
Full-bodied and powerful, yet remarkably precise. A delicate fruit sweetness on the attack is skilfully framed by vibrant acidity and a delicate tannin structure. The extract-rich density merges seamlessly with the invigorating structure – a balancing act that Guillaume Sorbe executes masterfully here. Juicy, concentrated, with remarkable texture.
Finish
Long, mineral and with sustained freshness. The acidity carries far, yet never comes across as aggressive.
Terroir & Origin
The grapes come from Chery near Reuilly on the Loire, from relatively young vines on a fascinating soil diversity: clayey-chalky patches alternate with gravel and red sand. This geological complexity is clearly reflected in the wine’s mineral character.
Grape Variety & Vinification
Pure Sauvignon Blanc, spontaneously fermented and patiently aged for three years – partly in tank, but mainly in used 400 and 600-litre barrels. This extended maturation gives the wine its unusual depth and texture. Classified as Vin de France since 2018, which gives Guillaume Sorbe greater freedom in winemaking.
Food Pairing Suggestions
Baked sea bream with olives, sun-dried tomatoes and pine nuts, crostini with celeriac salad and goat’s cheese or Lorraine bacon tart with rocket salad. The wine’s structure can certainly handle more robust flavours.

A Sauvignon Blanc that breaks with appellation conventions and demonstrates what is possible when patience and craftsmanship are allowed to flourish. Definitely decant generously and enjoy from large glasses – oxygen is its best friend.
