- Clear straw yellow with delicate green reflections – a Chardonnay that announces its freshness right in the glass.
- Nose
- Restrained yet complex. The wine needs time to open up: juicy Nashi pear, grilled pineapple and red apple unfold gradually. These are joined by fascinating notes of salted crackers and a fine yeasty-smoky nuance reminiscent of Tarte Tatin. The chalky, mineral character is underpinned by subtle herbs such as parsley, lemon balm and thyme, whilst fresh corn and yellow pea provide more intense accents.
- Palate
- Linear and precise – a Chardonnay without compromise. Rather than richness and power, Vorgrimmler opts for elegance and tension. The wine displays a warm core, enveloped in a cool, silky mouthfeel. The fruit aromas mirror the nose, whilst a fine, invigorating bitter note provides drinking flow. The acidity structure builds continuously – perfectly integrated, never intrusive. As it develops, dried herbs, coriander seed and fennel gain in presence.
- Finish
- Long and spicy with increasing herbal intensity. The acidity carries far, the mineral coolness remains present – a wine that invites the next sip.
- Terroir & Origin
- From the loess soils of Baden with Dogger and Jurassic limestone in the subsoil – formations from the Middle Jurassic period 180 to 159 million years ago. The fertile loess has been cultivated for 40 years, the soils remain untilled and harbour over 80 plant species. This biodiversity creates a unique microclimate.
- Grape Variety & Vinification
- Vinified with uncompromising naturalism: early harvest for freshness and acidity, moderate yields of 30-40 hl/ha through the estate’s own KV pruning method. Spontaneous fermentation at 18°C in steel tank, malolactic fermentation, ageing on fine lees. Sulphur added only once before bottling – as little as possible. A wine without additives that brings the terroir unadulterated into the glass.
- Food Pairing Suggestions
- With grilled monkfish, scallops with fennel vegetables, goat’s cheese tart or roasted asparagus with Parmesan. The herbal spice harmonises beautifully with king oyster mushrooms or risotto with lemon and thyme.
