Wine notes on the Tokaji Muscat SGN "Danczka" 2021
Background of the wine
The underlying jewel behind the texture of this dazzling wine is the Tokaji Muscat-Danczka region of the same name. The biodynamically grown grapes were patiently pressed and spontaneously fermented in Slavonian oak with a volume of 2.25 hectolitres. After maturing for twelve months, we obtain a wine with 10% alcohol, a sweet temptation of 232 grams of residual sugar and a pleasant acidic note of 8.6 grams with a pH of 3.48.
Visualisation
The wine presents itself with a light golden hue that catches and reflects the light beautifully.
Bouquet
Although it comes from the Tokaji region, one would initially associate Tokaji Muscat more with Pantelleria or Roussillon, thanks to its pronounced muscat tone. Nevertheless, the tradition of Muscat berry selection in Hungary is rich and sumptuous, reflected in the intense aromas of candied apricots, juicy nectarines and peaches, tantalising oranges and invigorating ginger. This spectrum of aromas is complemented by fresh citrus notes of kumquats and grapefruits, a hint of exotic mango and subtle hints of almonds, brioche and freshly grated nutmeg. Despite its rich concentration, the wine retains a clear, bright and invigorating note.
Pallet
On the palate, the 2021 Tokaji Muscat »Danczka« reveals itself as a viscous, silky and juicy experience that captivates with its high concentration. The high residual sugar content does not shift to a sticky character, but is masterfully balanced by lively acidity and minerality. The aforementioned fruits again offer a festive banquet for the senses. Complemented by nuances of nutmeg, rose and a hint of caramel, the taste of the wine is carried to a long-lasting finish.
Recommendations for food pairings
Explorations with blue cheese variations and crispy tostadas.
Variations of duck such as braised duck shoulder, duck terrine and duck liver pâté.
A traditional orange and almond cake from Spanish cuisine would also be a wonderful addition.
