Wine Description for III Lustros Brut Nature 2016 by Gramona
- Colour & Appearance
- Luminous golden yellow with green reflections, fine and even perlage with restrained mousse – a sparkling wine that visually hints at its seven years of maturation on the lees.
- Nose
- After 84 months of yeast ageing, autolysis dominates the bouquet in a fascinating way. Yeast, chalk and flint form the mineral foundation, above which unfolds a rich palette of yellow fruits: khaki, mango, peach and grilled pineapple. The fruit comes across as warm and concentrated – caramelised pear, candied quince, apricot compote. To this are added opulent yeast notes of biscuit, butterscotch and Tarte Tatin, accompanied by cinnamon, almond, caramel, roasted hazelnut and nougat. Dried Mediterranean herbs and hay bring refreshing contrasts. A Cava of remarkable character and charm.
- Palate
- The opening surprises with bright fruits – grapefruit, white peach, pear – before intense apricot, almond, cinnamon and marzipan build up. The lengthy yeast ageing lends the wine a creamy texture, whilst the acidity works perfectly integrated in the background. Moderate structure meets high intensity. The Mediterranean side reveals itself with pine, pine nuts, thyme, rosemary and lavender. Menthol and basil provide cooling freshness.
- Finish
- Elegant, long and lingering, with persistent yeast notes and mineral precision. The Brut Nature dosage underscores the purity and directness.
- Terroir & Origin
- The grapes come from the 22.5-hectare Font de Jui estate in Sant Sadurní d’Anoia, the heart of the Cava region. The vineyards stretch from the Anoia river (100 m) to the hills of Mas Escorpi (305 m) on clay and limestone soils – ideal conditions for mineral complexity.
- Grape Variety & Vinification
- Cuvée from 70% Xarel·lo and 30% Macabeo. Special feature: Yeast ageing takes place under natural cork rather than crown cap, with hand disgorging. After 84 months of maturation released as Brut Nature (without dosage).
- Food Pairing Suggestions
- A versatile companion to pan-fried monkfish, scallops with lemon butter, risotto with porcini mushrooms, foie gras or aged Manchego. Also a pleasure on its own.
