  • 👃 Aroma: Given a little aeration, it reveals nuances of lemon verbena, white flowers and roses, combined with lemons, mandarins, mirabelles, crisp peach, lanolin as well as cool stony spice, aniseed and pepper.
  • 👅 Palate: Bone-dry, fresh, crystalline and clear on the palate; initially showing lively acidity and fine effervescence, which with air transforms into a silky, juicy and piquant texture.

Colour & Appearance
Light to medium golden yellow with subtle green highlights.
Nose
Initially extremely restrained and closed. With sufficient oxygen, a complex spectrum of lemon verbena, white blossom, lemons, satsumas, mirabelle plums and crisp peaches reveals itself. A hint of lanolin meets a cool spice of aniseed, crushed rock, pepper and sublime rose petals.
Palate
On the palate, the wine presents itself as savoury, fresh, crystalline and focused. A gripping acidity meets a fine, vibrant effervescence. The initially taut mouthfeel transforms in the glass into a silky, more piquant texture with tremendous drinking energy.
Finish
Long, electrifying and highly elegant with a deeply mouth-watering salinity on the finish, which resonates powerfully despite its low alcohol content.
Terroir & Origin
Hails from the steep single vineyard Steiner Schreck in Stein an der Donau (Kremstal) at around 320 metres above sea level. The soil is interwoven with Gföhl gneiss and granite. The parcels are planted with 80-year-old vines and farmed according to strict Demeter guidelines.
Grape Variety & Vinification
100% Riesling, harvested on 8 September 2019. The grape must was processed over two days on a custom-built, 100-tonne wooden beam press. Following targeted juice oxidation, spontaneous fermentation took place in a historical gneiss tunnel cooled to 9 °C. For additional freshness, 3–5% destemmed berries (intracellular fermentation) were added. Maturation took place over two and a half years on the full lees in a 1,000-litre earthenware amphora. Bottled in February 2021 unfiltered with 0 g/l residual sugar, 8.0 g/l acidity and minimal added sulphur.
Food Pairings
Excellent with scallops with lemon and olive oil, pan-fried Arctic char with fennel vegetables or a classically prepared veal Wiener Schnitzel.
