Wine description for Habla de Ti… 2025 by Habla

Character
A white wine of straightforward presence that makes no secret of its origins. Cool, precise and of mineral clarity – a wine that speaks without shouting. Dry, with taut acidity and a freshness that evokes citrus and green herbs.
Terroir & Origin
From Trujillo in Extremadura, where slate soils and extreme temperatures – scorching summers, biting winters – push the vines to their limits. No mild climate, but one that shapes character. Here, where Francisco Pizarro once set out, wines of architectural clarity are born.
Grape variety & Vinification
Sauvignon Blanc, single-varietal and unadulterated. The vinification follows the bodega’s principle: gravity rather than pumps, stainless steel for fermentation – an approach that preserves the fruit and allows the minerality of the slate to shine through. No wood, no mask, just the vine and its soil.
Food recommendations
A wine for the start of a meal or for light dishes. Goat’s cheese – yes, nevertheless –, grilled fish, asparagus with lemon oil or a simple salad with herbs. Also perfect on its own, on a hot evening when the air shimmers and the slate releases its coolness.
