Wine description for Garennes Extra Brut 13-23 LG23 from Georges Laval

Character
Georges Laval is one of the most uncompromising advocates of biodynamic viticulture in Champagne. His Cuvée Garennes Extra Brut embodies a purist philosophy, which focuses on minimal dosage and maximum expression of the terroir. With only 12% alcohol, this is a elegant restraint, which gives the wine flavour and finesse. The designation 13-23 refers to the harvest years of this wine. perennial assemblage - a typical feature of Laval's quest for complexity and maturity.
Terroir & origin
The winery is located in Cumières in the Vallée de la Marne, a region known for its clay and chalk soils. Laval cultivates its plots according to biodynamic principles without herbicides or pesticides. The Garennes vineyard produces grapes that are characterised by the cool northern exposure and the mineral soils develop a special tension. This authentic approach allows the wines to develop the true identity of their origin.
Grape variety & vinification
The classic champagne trilogy from Chardonnay, Pinot Noir and Pinot Meunier is fused here into a harmonious unit. Laval works with spontaneous fermentation in old wooden barrels and deliberately dispenses with fining and filtration. The extra brut dosage with minimal added sugar emphasises the Natural acid structure and allows the wine to retain its original expressiveness. The long ageing on the lees over several years gives the cuvée Depth and complexity, without masking the lively freshness.
Food pairing suggestions
This precise, dry champagne is an ideal accompaniment to raw seafood, Oysters or Sashimi. The reduced dosage harmonises perfectly with matured cheeses like Comté or with roasted poultry. Also to Mushroom dishes or nutty starters the wine reveals its full class. As an aperitif, it reveals its elegant, unobtrusive nature.
