Wine description for Fuoripista Pinot Grigio Vigneti delle Dolomiti IGT 2023 from Foradori
General information
Colour & appearance
A transparent, light cherry red with copper-coloured reflections - a rarity for most commercial Pinot Grigios, which are typically vinified as pale white wines. The colour comes from the extended skin contact time and reminds us that Pinot Grigio is actually a mutation of Pinot Noir.
Nose
Precise and focussed with a fascinating combination of red apple peel, green almonds and a tart wild fruit note of rosehips and cranberries. The eight-month maturation in clay amphorae gives the wine a subtle mineral component reminiscent of damp limestone. Nothing seems exaggerated or artificial - the terroir of the Dolomites speaks with crystalline clarity.
Palate
The palate reveals a remarkable texture - silky and transparent, yet with a finely woven tannic structure that gives the wine backbone. The fruit recedes in favour of a complex minerality and subtle herbal notes. The moderate alcohol content of 12% supports the elegance. The finish is precise, tart and of medium length, with a pleasant salinity on the finish that is typical of the best wines from this region.
Food pairing suggestions
The complex structure and tannic mouthfeel predestine this wine for dishes that go beyond the typical Pinot Grigio pairings. Excellent with Mushroom risotto, smoked fish, Rabbit with herbs or medium mature mountain cheese. The acidity structure and fine tannins also make it an ideal accompaniment for Dishes with nuts and Root vegetables.
Special features
Fuoripista is a radical statement against the industrial standardisation of Pinot Grigio. The use of clay amphorae and the extended maceration period transform a grape variety that is often dismissed as irrelevant into a multi-layered wine characterised by its terroir. With an annual production of only 10,000 bottles, it represents an important contribution to the renaissance of authentic winemaking in Trentino and should ideally be served at around 12-14°C, slightly warmer than most white wines, in order to fully develop its complex structure.
