Colour & Appearance
A luminous pomegranate seed red in the glass – anyone expecting a conventional Pinot Grigio will be swiftly corrected. This colour is the visible promise of a radically different path.
Nose
Expressive and multi-layered: rosehip and orange meet a bouquet of Mediterranean herbs, wild raspberries and mineral, stony notes. The balance between sweet fruit and compact structure is remarkable – this is Pinot Grigio as you’ve never experienced it before.
Palate
Immediate piquancy and a gripping, almost tactile texture define the first impression. The tannins – yes, tannins! – are present, but perfectly integrated. Herbal freshness enlivens the character, whilst the moderate 12.5% alcohol lends the wine a delicate, almost ethereal elegance. Stimulating, complex, meditative.
Finish

Pinot Grigio (Grauburgunder), taking a radical path: Over 8 months of skin contact in Tinajas (clay amphorae). This orange-wine-style vinification extracts colour, tannin and texture from the skins, revealing the delicate yet complex character of the variety in an entirely new way.
