Wine description for Fontanasanta Manzoni Bianco Vigneti delle Dolomiti IGT 2023 from Foradori
- Colour & appearance
- Rich, intense lemon yellow - a wine that already visually announces its density and concentration.
- Nose
- An olfactory kaleidoscope of yellow fruit: ripe Pineapple, Peach, Mirabelle and Apricot The flavours are initially dominated by the stone fruit before it gains the upper hand as the air supply increases. Candied Orange and lemon zest bring tart freshness, while Ginger spicy accents. Meadow flowers and wild herbs lend the bouquet floral and ethereal nuances. A wine in constant metamorphosis - even in the glass it remains restless.
- Palate
- The first contact is electrifying: salivating, spicy, intense. The Acid structure is the backbone of this Manzoni Bianco - elemental, style-defining, uncompromising. It runs through the wine like a red thread and repeatedly breaks up the dense, almost oily texture. The juiciness is reminiscent of tropical Pineapple, while the acidity drives and challenges the drinking flow. The finish is brilliant Bitter orange and candied zest, dried herbs work subtly in the background. A wine with tension and pressure - not for lovers of pleasing randomness.
- Departure
- Long, precise and characterised by persistent spiciness. The citrus flavours linger, the acidity remains present and leaves a refreshing, slightly tart impression.
- Terroir & origin
- The vines grow on a hill near Fontanasanta with a view of Trento. The clayey soil with high Lime content gives the wine its mineral tension. The late ripening into September enables optimal flavour development with a moderate alcohol content.
- Grape variety & vinification
- Manzoni Bianco, a cross between Riesling and Pinot Bianco, finds ideal conditions here. Mash fermentation in cement tanks, followed by seven months of ageing in Acacia barrels - An unconventional choice of wood that lends the wine additional aromatic complexity without dominating it.
- Food pairing suggestions
- The acidity structure calls for strong partners: fried sea fish, Scallops with citrus, Sweetbreads, Risotto with porcini mushrooms, matured mountain cheese or Asian cuisine with ginger and lemongrass.
- Special features
- This is a wine that rewards patience. Foradori recommends at least three years of ageing in the bottle - a long-distance runner that will develop over many years. If you drink it young, you should decant it generously.
