Wine information
Rooted in ancient limestone, clay and sandy soils, the 72-year-old Xarel-lo vines promise an authentic touch of terroir.
About the ripening process
Thanks to wild yeasts and a natural fermentation process, the wine matured for eight months in 300-litre Burgundy barriques. The fine balance between used and new barrels gives the wine an additional complexity.
Exterior appearance
The bright golden colour of the wine is interspersed with green reflections, reminiscent of a sunny day in a vine-lined vineyard.
Scent
The 2020 Nun vinya del taus unfolds a breathtaking bouquet of scents reminiscent of a wild herb garden. Laurel, nettle mint, juniper and even a subtle hint of lavender are discernible. A well-balanced sweetness of orange, mango and lime harmonises with the spicy notes of vanilla, dried ginger and malt that echo through the oak barrel ageing. This aromatic symphony is just waiting to be tasted.
Taste
The wine impresses with its rich variety of flavours and balance. The sweet-salty tone combines with a well-structured tannin layer surrounded by a juicy, exotic fruitiness. The long aftertaste is a promise of its greatness, whetting the appetite even more for spiced dishes with fruity undertones.
Serving suggestion
To enjoy this wine, I recommend decanting it and serving it in a large glass at a not too cold temperature.
Culinary recommendations
Pumpkin curry soup with roasted pumpkin seeds offers an autumnal experience. Stuffed chicken breast with pears and cranberries on wild rice mix brings a mix of sweet and savoury. But also pink-roasted tuna with a pepper crust, served with mango and sea vegetables, harmonises perfectly with this wine.
