- 100% Chardonnay, hand-harvested on 12 September 2023. Following slow whole-bunch pressing, spontaneous fermentation took place in used tonneaux, where the wine aged for 13 months. Coarse filtration, light sulphiting (79 mg/l), bottled in November 2024 – purist vinification that gives terroir pride of place.
