Tasting note
Wine information
The wine comes from 0.15 hectares in the Le Chapitre vineyard in the immediate neighbourhood of Clos du Roy in Chenôve to the west and Montre Cul to the east. Although the site has been known since the Middle Ages, it has only recently been included in the Marsannay appellation. The vineyard is organically farmed on a soil of red stony clay and sandy soil on Comblanchien limestone. It is also home to grèzes litéessandy and gravelly rubble. After destemming, cool pre-fermentation and spontaneous fermentation, the wine is matured slowly on the fine lees for 18 months in 228-litre barriques (mainly from François Frères) with a new wood content of 20 to 30%.
Colour
rich cherry-red
Nose
The Marsannay »Le Chapitre« leaves no doubt that the wine comes from a comparatively cool corner of the world. It has a slightly tart aroma of crisp forest fruit with leaves and foliage. There are also notes of mint, verbena and a little laurel, framed by some wood and tobacco, as well as red and violet flowers.
Palate
On the palate, there are slightly tart notes that give the wine its own character. However, these are mixed with more ripe fruit and extract sweetness than expected. The wine is almost charming, but at the same time remains firm in its tannins, appears stony, quite powerful and serious in its structure.
Food pairing suggestions
- Poultry terrine with country bread(poultry)
- Carp in red wine with Quatre Épices (fish)
- Sour kidneys with pinot and rosemary (meat)
