- Pale straw yellow with lively, medium-fine perlage, testament to 18 months of maturation on the lees. The mousse is elegant and persistent – a visual promise of quality.
- Nose
- This Crémant defines what single-varietal Chenin Blanc sparkling wines can achieve: elegant fruit meets seductive pastry notes. Expressive and juicy, citrus fruits and pears unfold, alongside lemon curd, pain suisse and a hint of vanilla. The nose is complex, yet never overwhelming – precise and inviting.
- Palate
- Fresh and pressurised, the Crémant presents itself on the palate, dry and crisp, whilst simultaneously juicy and bright-fruited. Again, citric notes and stone fruit dominate, accompanied by a whisper of almond cream. Particularly impressive: the chalky notes, which lend the wine structure and depth. The refined texture and lively perlage are precisely where they should be after 18 months of bottle fermentation.
- Finish
- Clear, fresh and mineral with lingering citrus notes and fine chalk-mineral character. The finish remains precise and invigorating – one immediately wants the next glass.
- Terroir & Origin
- The Demeter-certified grapes hail from an old vineyard on the Loire with a fascinating subsoil: green and violet slate, volcanic rock and quartz. This geological diversity is reflected in the wine’s mineral complexity.
- Grape Variety & Vinification
- 100% Chenin Blanc, harvested in early September 2022. Following whole-bunch pressing and spontaneous fermentation, fermented dry. Bottled for secondary fermentation on 31 January 2023, disgorged after 18 months – traditional method, executed with artisanal perfection.

- Ideal with oysters, scallops, smoked trout or goat’s cheese. Also excellent with tempura, sushi or asparagus dishes with lemon butter. As an aperitif, quite simply a revelation.
