Nose
On the nose, the 2021 Phaunus Pet Nat shows plenty of red berries in a delightfully fragrant and non-cheesy way. Raspberry and strawberry are clearly prominent, along with redcurrant. The fruit appears pleasantly small-berried and gives the impression of tartness. Freshly chopped almonds and a little hay join in. Dried herbs, fresh thyme and a hint of sea breeze counteract this with a lot of commitment. It is very appealing in the glass and makes you want to drink it.
Palate
On the palate, the sparkling wine from the Vinhao and Alvarelhao grape varieties clearly exceeds the already high expectations. The fruit is restrained. This creates space for a mixture of juiciness and drinking flow. The carbonic acid initially provides a burgeoning moment that is characterised by fullness and melting. But quite quickly, the acidity pushes from behind and puts an end to this entertaining moment. It is time for a taut, but well-dosed acid structure that sets the stage for the minerality. Enormously cool and elegant, yet pleasantly uncheesy and with a lot of finesse.
