Cultivada is located in Seville, in the heart of Andalusia. They grow three fundamentally different olive oils. Arbequina, Hojiblanca and Picual. Depending on the vintage, there are three varietal pure oils as well as the Cuvée. The Quintaesencia of Cultivada is a blend of the three important varieties of Andalusia. Each of these three olive varieties makes its essential contribution to this cuvée. Harvested early and of course cold pressed. The cultivation of the olives and biodynamic oriented.
Bright golden yellow
The Quintaesencia by Cultivada shows a racy, grassy note at the beginning. Besides freshly cut grass, coriander, wheat grass and parsley are dominant. A little lemongrass and basil are a close second, along with anise and fennel. The Andalusian olive oil also has a fruity note, strongly reminiscent of tart lemon peel, khaki and granny smith. Coriander seed and ground white pepper contribute some spice.
It is the quintessence of these so important olive varieties in Andalusia. So it also shows itself extremely harmonious. Slowly it runs over the palate. Rather creamy in the texture. At first it makes a very mild start. Presents a delicate acidity and only slowly reveals a few bitternesses. A subtle spiciness emerges on the finish, but very restrained. The spicy and grassy aromas of the nose are clearly present in the finish. Also tart almonds unfold increasingly in the finish.
